- 1/2 Jar of Beans in Tomato Sauce (do not rinse!)
- 2 Eggs 🥚
- 1 Large handful of fresh spinach 🌿
- 1 Tablespoon of olive oil
- Salt, pepper, and chili flakes (optional) 🌶️

- Sauté Spinach: Heat the oil in a non-stick skillet. Add the spinach and let it wilt (about 2 minutes).
- Add Beans: Pour in the beans (including their sauce) and allow them to heat up thoroughly.
- Crack Eggs: Create two small “wells” or spaces in the bean mixture and crack the eggs directly into the skillet.
- Cook: Cover the skillet and cook over low heat until the egg whites are completely set, but the yolks remain runny (approx. 5-7 minutes).
