This recipe is perfect for bringing the traditional taste of home to your table, quickly and effortlessly. Using our ready-made (canned) or frozen beans drastically reduces the cooking time!
🥣 Ingredients (Serves 4):
- 1 Jar (720g) of Traditional Beans in Tomato Sauce (or 400g Frozen Beans) 🥫
- 1 Large onion (finely chopped) 🧅
- 1 Medium carrot (diced) 🥕
- 1 Red bell pepper (diced) 🫑
- 2 Cloves of garlic (minced)
- 400 ml Tomato juice or broth
- 2 Tablespoons of sunflower (or olive) oil
- Salt, pepper to taste
- 1 Teaspoon of dried thyme
- Fresh parsley (for serving) 🌿
⏳ Preparation Time:
- Prep: 10 minutes
- Cooking: 25 minutes
- Total: 35 minutes
👩🍳 Instructions:
- Sauté Vegetables (10 min): Heat the oil in a deep pot. Add the chopped onion and sauté until translucent. Add the carrot and bell pepper. Cook over medium heat for about 5-7 minutes, stirring occasionally. Add the garlic and thyme and cook for 1 more minute.
- Add Beans and Sauce (10 min):
- If using Canned Beans (recommended): Pour the jar’s contents (beans and sauce) directly over the sautéed vegetables. Add the tomato juice.
- If using Frozen Beans: Add the frozen beans over the vegetables, leave for 2 minutes, then add the tomato juice and one cup of water.
- Simmer and Season (5 min): Bring the stew to a boil, then reduce the heat and let it simmer for 5-10 minutes, until the sauce thickens slightly and the flavors combine.
💡 Serving Suggestion:
Adjust for salt and pepper. Serve the stew hot, generously garnished with fresh chopped parsley. It pairs excellently with assorted pickles or fresh homemade bread. You can optionally add a dollop of sour cream when serving.
